Prep time plus cooking time: 30 min. | Serves 4
- 250 g flour
- ½ tsp salt
- 2 medium eggs
- 500 ml whole milk
- 2 tbsp butter
- 24 slices of bacon
- Put the flour and salt into a large bowl. Add the eggs and the milk, then mix until you have a smooth batter.
- Put a frying pan on a high heat and melt a knob of butter. Fry three slices of bacon for 1 minute before turning.
- Pour half a ladle of the pancake batter over the bacon. Swirl the pan immediately, making sure that the bottom of the pan and the bacon are completely covered with the batter. Cook until the top is dry, then flip the pancake and cook for about 1 minute.
- Put the pancake on a warm plate and repeat until all the batter has been used up.
